What makes a smokehouse a smokehouse

Four design features separate a smokehouse from a backyard vertical smoker, and a unit needs most of them to earn the name.

  • Hanging rods. Sausage, snack sticks, whole fish, bacon slabs and hams hang from rods or hooks so smoke reaches every surface and nothing sits in its own drippings. Racks are optional; rods are the point.
  • External smoke generator. Smoke is made in a separate chamber — a chip burner, a pellet feeder or a sawdust smoulder box — and ducted into the cabinet. Heat and smoke are independent, so you can run heavy smoke at a low temperature or a hot finish with no smoke at all.
  • Low, stable temperature hold. A smokehouse spends most of its life between roughly 100°F and 180°F, stepping up in stages. Its controller and insulation are built for that, not for 275°F ribs.
  • Circulation. A blower moves air so the top of a hanging load and the bottom see the same temperature and smoke. Without it, a tall cabinet stratifies and the product finishes unevenly.
